Think we'll be able to pick which Skills demons inherit through Fusion?

You could in both Devil Survivor games, and Strange Journey gave you some control over inherited Skills with the D-Source system (though it was still random). And now, I've found out that you can choose which Skills you want Persona to inherit in Persona 4 Golden.

Do you think that convenience would be brought into this game?

I hope so, because technically you can choose which skills to inherit in Strange journey it just was tedious.
so I don't see why they can't just make it straight forward like in DeSu

I hope so.
Rerolling fusions for skills was never a fun bit of tedium for me.

You always were. The difference is that you won't break your 3DS' buttons by rerolling the random skills.

ANYWAY, I think it'll be possible, though my guess is that we'll be seeing yet another skill system.
