Mortal kombat is the only fighting game I've ever played so how does it compare? I don't like playing mk9 anymore because the opponents are too ridiculously good. Take you out in two combos? No thanks.

With that logic i think you will be fine...
might start with gen or 3 first, you need some experience of the new systems... playing around makes them kill your char... really annoying cause there isnt a practice mode yet
i also like the dbz tenkaichi/raging blast series...
from what i tried of mortal kombat on my vita (ps+ game) the timing for combos is just too short.

Might notice that the storm series and the dbz games i mentioned have fighting game as a secondary genre, their main goal is to emulate the series they are based on as best as possible.
hence the many reenactment battles on youtube and why the story modes in bt3-rb1 (same design but got an upgrade, was pathetically short in bt3)
if you need to buy id say bt2, story, bt3 gameplay (most prefer this) and the same order for raging blast 1 and 2..
