How many Classes and Jobs can I have per character?

Can i be a Gladiator / Conjuer = Paladin only?

or can i have a another setup like Dragoon if i would happen to want to DPS atm?

You can max out everything. You can save different gear sets for your different roles thanks to the armory system.

you can have all the jobs. in fact, it's recommended as you can get cross-class skills.(like being able to cast cure when you're not a conjurer)

You can have all the classes and all the jobs on one character, including all the crafts and gathers. Basically, unless you want to try out different races or you want to see the beggining of the 3 cities (only the early game quests), you will never need more than 1 character.

Only small hiccup is Scholar vs Summoner requiring different stat and preventing you from having both min-maxed at the same time without stat respec and we dont know how to do that yet.
