Never played a MH game before and was wondering if this game is just quest after quest with new ones being added through updates, or if it's like a normal game where it has an ending and then you are done with options to go and redo things?

It has a final boss and ending, yet after that new quests get unlocked.

Well, the game is just quest after quest. However, there is a very small story that goes on throughout the game. There is a last boss that you beat and ending credits that roll afterwards.

However, the game is mostly about quests. You can redo any quest whenever you want and there are a lot more quests to do after you beat the game.

Usually when you get to the "end" in a monster hunter game and get the credits rolling, the game is only about 20% over.
