on gamefaqs it seems that the majority of gamers can tell the difference and care whether a game is 720p or 1080p

No. I think they care more about the $400 vs $500 debate than 720p vs 1080p.

I'm sure they mostly know this much:

1080 is more than 720, and that means it's better, but I bet most assume all their games run at 1080p already, because that's what their TV is.
