Jet Force Gemini. The game has dated controls and mechanics but anyone who's taken the time to get into it knows that there's too much amazing stuff in that game for it to continue to go unnoticed. A remake could make the game more accessible by improving the controls, upping the frame-rate and being on modern consoles which are easier to access than the N64.

I would love to see a Secret of Mana re-master. It holds up great to time, but it would sell like hotcakes. Especially if the added online co-op and some extra random side-quests to keep people playing after its over.
