Why didn't Xbox stick with their original logo?

It was badass. The black and green combo is much better than the white and green one introduced starting with the 360.

The way the letter X is styled was also pretty cool and unique.

Too 90s "this is for teenage boys only". They wanted something lighter that could also symbolize the same "well rounded"-ness the name 360 and One were trying to elude to. It's a box for all your entertainment needs, not just a game device for teenagers. I think with One they sort of tried to add a dash of web 2.0 as well. MS is pretty slow moving with these things.

They made it round for the whole spinning 360 logo thing. It's basically stuck like that now.

The new one is sleeker. Sharp typeface too. The new logo probably had something to do with the 360 being the center of the house hold. All in one etc. The original logo had more of a mountain dew hardcore gamer vibe. The new logo is more appealing to wider audience, which coincided with their new vision. It wasn't just a logo swap. It was a revamp of their entire brand identity. The original logo looks kind of cheesy and dated, in my opinion.
