From what ive gathered, it seems to me he was left handed dominant and used his sword in his left hand.

Then when his left hand broke defending sif, he had to switch hands and use his inferior hand in the fight you had with him in dark souls 1. If you noticed his hand was motionless and simply swaying in the momentum of his movements, which tells me he lost all use in his left hand and was forced to switch to his right, or so I speculate.

Anybody can confirm or disprove?

I don't think there's anything to imply that he was left handed. He had to leave his shield because his left arm got messed up, but I don't see any reason to believe that that was his sword hand.

There's literally nothing in the games, concept art or descriptions of items that says he was left-handed.

I stand corrected. Apparently the Majestic Greatsword description (which is supposedly Artorias' sword) says that it was wielded by lefties.

Yeah, it says every person who INHERITED the sword was left-handed and not the original owner

The answers to your questions, in order, are "yes" and "no."

Of course, but they wouldn't just mention that if it wasn't significant. It's like saying that the Old Paledrake Soul isn't Seath's because there could have been another pale Dragon at some point.
Basically, if the developers mention that a particular sword was wielded by left handed people, and the aforementioned sword is known to have belonged to a famous individual which is why the sword is so well known, then they are probably referring to the aforementioned famous individual.

It is significant, because the weapon was clearly designed to have a special move in power stancing or your off hand, so putting it in the description makes sense.

There's no reason to assume that Artorias, who only uses his right hand and is right-handed in all concept art and can perform a right-handed version of the special move on the Majestic Greatsword, was left-handed

Yeah, but did Artorias inherit it?

I don't care if he was left handed or not. But there is definitely reason to believe he is. How strongly your believe is up to you. I don't, because I like to think he lost use of his arm as it blocked some sort of magic against Sif or something. You don't use your shield in the off hand. And even if he was left handed, this isn't anime. Switching to your true stance won't double your chakra or anything silly like that.

Anyway it's all very non relevant and not important to the story/lore.
