How come pokemon don't evolve during battle?

Yes you have to wait because if it evolves then it will eat you and kill your family

Because the battle would essentially have to be restarted. It's just easier to wait until after the battle. Plus, some Pokemon learn new moves when they evolve, and that could put them at an advantage, like if they're stuck with using Struggle.

But Pokemon can learn new level-up moves during a battle now. In fact, they've been able to since RBY.

Although, it would be cool to see Krabby evolve into Kingler in the middle of a battle for lolz

None of this makes sense. The battle wouldn't have to be restarted, I don't know why you would think that. Moves have always been able to be learned during battle. And remember that your new moves have the same percentage of PP as the move it replaced, so a Pokemon stuck with struggle would still be with struggle anyways.
