say nidoking or charizard, what are they, there not adult or mature forms of the prevos,
I guess what im trying to say is evolve forms aren't ages of a pokemon right?
so what are they?

There is no evolution, only creation. The Pokemon prays to the Pokegods to create a new form for it, and then in a flash of holy light its old form is destroyed and a new form is created. Unless you cancel out the holy light by calling on Beelzebutton. ;)
