Two possibilities come to mind.
normal or fighting

Ps no starter starts off as either of these so no starters or starter evos.

I's say pure grass is the worst combination of offense and defense
ice has crappy defense, but really good offense, so that disqualifies it.

Not really. Hell, you can make a pretty good team with most of the Unova pokemon alone. And Mandibuzz is there for the Fighting weakness

Normal wouldn't be that hard. They tend to have the most diverse movepools, and most can learn the primary elements like Flamethrower, Thunderbolt, Ice Beam, etc. If anything that'd be among the easiest.

See this sounds like a blast but I was hoping to not have to import a world of pokes to make this work. Do we have type where one can find a reasonable amount of pure types in game?

I would be willing to drop the starter if we picked something where they didn't fit (i.e. not fire, water, or grass). Thats no big deal to me.

Normal has a diverse movepool. I don't see that as a big deal. Fighting could be though...

Pick Tepig and throw it in the back of your party with a Exp. Share as an HM slave, then once it evolves you can switch it into your team.
