I do know that there was a Playstation game about dragons that did it that way though. (Dragon Seed?) If you didn't forfeit and their health reached zero they died permanently. But I don't remember this at all in Monster Rancher, my monsters never died unless it was old age and I know I didn't win every battle.
It's true that in some monster rancher games, your monsters would die in battle as well as old age.
In dragon seeds it was the same, however, if you stored the dragon at any point in a capsule and it died later after removing it, you could reclone him with the stats he had upon entering the capsule.
