Red should get Charmander because he's red; Blue should get Squirtle because he's Blue. =P

The canon starters are what has been defined in the manga. That means:

Red: Bulbasaur
Green (or Blue in America): Charmander
Blue (or Green in America): Squirtle

So that's that really.

I voted Pikachu and Eevee

I dont remember Blue's team in GSC, but pretty sure he had an Eeveelution, or all of them. Red, of course, had Pikachu. Which seems to me to suggest that Pokemon Yellow is the most canon

Third game always seems to be canon

Because the manga is stated to be exactly how the creator intended the Pokemon world to be. Therefore, the manga is canon.
