Because Poison is all about weakening something physically, and mental things don't get phased by it.

Ground is SE cuz it's hard to poison dirt.

Psychic is SE because psychics cure poison with magic powers.

Ground is SE because putting dirt on poison makes it less deadly.

These are both arguments for the types resisting Poison. Psychic-types get hit for normal damage by Poison-type moves. Your Ground argument actually works though since Ground-types resist Poison-type moves.

These are both arguments for the types resisting Poison. Psychic-types get hit for normal damage by Poison-type moves. Your Ground argument actually works though since Ground-types resist Poison-type moves.

Poison because if a psychic eats cyanide, he'll probably die.

If mental things don't get phased by poison, then Psychic-type Pokemon would either resist or be immune to Poison-type moves. But they don't. An explanation like KyrieIrving's ("psychics cure poison with magic powers") makes more sense because it talks about the stronger type affecting the weaker type, as opposed to the weaker type not affecting the stronger type (which is a resistance or immunity).
