some people like to use one for their collection of pokemans and the other for restarting and doing playthroughs

Artificial demand generated by forcing only one save per game and having version exclusives.

i buy both so i can always restart one and keep all my pokemon/items on my other file. then later after i get the next games the coming year i give the restart file away to a friend who cant afford games.

Pretty much this for me. I buy one on release date then as soon as I get the urge to play it again I buy the other one, play through it (usually with Pokes I wouldn't use competitively), transfer, then give it away/sell it.

Getting both legendaries, easier access to exclusives, farming event pokemon and starters, the ability to play again without erasing save data, etc
Take your pick

All of the above. My main file becomes my vault where I keep all my good/rare pokemon and items. After I have beaten the game, I generally want to do a special playthrough. This is where the second game comes in. Once that playthrough is done, I trade all the worthwhile pokemon and items to my vault and start again.

One for a main file, collecting, events, ev trained pokemon, etc, that will never be restarted.
Another for fun, when I want to restart, or collect more copies of wifi event pokes(Usually as gifts for family with no internet), etc.

Also, with both copies, I can trade with myself for version exclusives, collect more 1 time only items, and just basicly have the freedom to play as I want.
