Could Steel Wing work on a mixed Yveltal to deal with fairies?

Would poison jab be better?

Or would it be better not to have an anti-fairy move and leave that to other mons?

Steel Wing hurts rock types as well it will cover Yveltals weaknesses better

Just use Oblivion wing or any other flying type attack. Sacrificing a moveslot for a little more power against fairies isn't worth it. In fact a STAB hurricane is more powerful than a SE steel wing

Already have Oblivion Wing, Dark Pulse, and Sucker Punch is planned.

I've seen Roost suggested, but I don't know if that would be best since he probably wouldn't take too many hits to begin with. Healing seems like it would be a wasted move, unless the opponent was switching.

Oh, and Fairies typically have low defenses, I've found.

Maybe but unless you actually invest in his attack (which I assume you're maxing Sp atk and speed here) the difference is negligible. You're better off using focus blast to hit pokemon resistant to his stabs (tyranitar, bisharp, etc.), using roost to heal, or even using hurricane as well as oblivion wing for more power or if you're fighting in rain.

Not quite.

As said in the title, it's mixed; Hasty nature (-Def, +Speed), Max IV's in speed, attack, sp.att, with 72 EV's in Att, 252 in Speed, and the rest in SpAtt.

I could probably put a tad more from SpAtt to Att, but I'll test it out a bit more before I pull the berries out.
