Trying to get a Froslass with spikes :/

To do so I must get a male Roselia, make him learn spikes, and get him with my female Snorunt of the desired nature holding an everstone, right?

You just need a male that knows spikes that is in the same egg group, breed with a female snorunt and bam.

Ok, but... if it gets Spikes via Egg Move, will the offsprings keep it when grinding for IVs?

Let's say, every offspring I hatch will have it?

When you put a pokemon into daycare, the moves it has at the time you put it in become "locked"

So even if it looses that move in daycare, it can still pass it on.

Provided they still know it when they're put into the day-care, yeah.

Gen 6 made it so both parents can pass moves, but I'm unsure of the exact mechanics. For a guarantee, as long as a male has Spikes in its move set, the babies will have spikes as well.

Yeah, it wasn't the case last Gen.

But Egg Moves can be passed by females now.
