You might want to do some breeding without the Destiny Knot to get the IVs you need to get all 5 31IVs across two parents.
With the Destiny Knot 31/x/x/x/x/x and x/x/31/31/31/31 parents have a greater chance at getting at getting a 31/x/31/31/31/31 child than two x/x/31/31/31/31 parents (its a 1/6 chance ontop of a 1/31 chance if you do it like that). Plus with the 31/x/x/x/x/x you can literally switch it out for a better parents with the missing IV.

IV breeding is always gonna be luck based. Have to hope in 1/6 chance that iv you dont want isn't carried . Yes, its random (5% for 5IVs given two 4IVs) . Yes, it can be time consuming. Yes, for 90+% of battles it won't be worth it. For most pokemon you can just get the IVs in attack stat and Speed fairly easily and consider yourself done.
One thing I've found that makes it more fun is to just raise a 2-4IV Outstanding poke and use them until I care enough to go for 5.
