As you may be aware, the coin concept was also featured in Mario Kart 7. In this game, you could only keep the coins you finish a race with, meaning it wasn't possible to collect more than 10 coins per race.
Many are saying that, this time around, you keep the coin the second you grab it, permitting you to bring home more than 10 coins per race.
Since MK8 chose to not have a "player records" screen and we cannot see our coin count (except when unlocking parts), it's been a bit difficult to confirm.
Well, several of us have taken to doing some experiments to figure this out, which you can see detailed on this thread:
And we can confirm that, unfortunately... NO, coins are not added to your "wallet" the second you grab them. You only get to keep however many coins you are holding when a race ends.
Fortunately, MK8 did change a few things from MK7 to make coin grinding more manageable...
- Coins count in all modes in MK8, whereas they only counted in GP and Online in MK7.
- The number of coins needed to unlock parts is much less in MK8 than MK7 (although there's still the staggeringly high 20,000 coins needed for the Gold Glider).
- When playing local multiplayer, the coins count for each player, so if you have friends, you can basically add a 4x multiplier to your coin-collecting needs.
However, this IS a farming method to be yielded from this experiment, especially if you don't have friends. Set up a versus match with 4 human players, park three of them on a coin (so they'll collect it automatically when it respawns), and then guide the other player to the finish line. You just netted 40 coins with minimal effort in a single race.
So, there's that.

This is incorrect for a simple reason.
Upon starting a new file, you can unlock the part for getting 50 coins after a single Grand Prix.

Can you support this claim?

I thought the Golden Glider took 10K to unlock, not 20K.
Either way, thank you for confirming. This weekend we collected 4K coins simply from playing multiplayer for hours upon hours. I have no doubt that we'll unlock the gold glider in no time just from normal play.

I kind of figured it was true after my 2nd Grand Prix.
I finished each of the races with 10 coins, and didn't unlock the first 50 coin part till after the 2nd grand Prix. then 2nd part after the 3rd.
If it was true I should've gotten 1 after each set of races.

I will add to your original post.
When I first got the game I played online all night with my cousin for two days straight before playing single player. Now, every time I play a single player event I unlock a new piece of equipment. However, it only unlocks after playing a cup or playing one race in a cup and then quitting. I'm wondering if it is counting all of those coins I saved up from playing online but requires one race in a cup between each for them to count to unlock a part.

If you somehow collect enough coins to unlock TWO parts, you will only get notified for one. It's not until you go to the kart select screen and find out what part you got that the game will ever tell you you unlocked another one, and it won't notify you until you work your way back to the main menu.
If you play online a lot, this will happen, because you never get an opportunity to go back to the kart select screen online; you're locked into your character and kart combination until you exit the room and join a new one.
I played online long enough to earn about 400 coins... But it would only notify me one part at a time. I had to go into the kart select screen, view my new part, and back out to the main menu to get another one.

I have unlocked a new vehicle part after completing every Grand Prix, which requires 50 Coins. You can only hold 10 Coins at a time during a race. So 10 Coins x 4 races = 40 Coins. But like I said, I still unlocked a new vehicle part every GP, so that must mean that you can collect more than 10 Coins toward your overall count.
