So I have a chance to get a 28" 1440p monitor for $360. Considering my specs, do you think it's worth it? I play games like Skyrim, Dirt 3, BF3, NBA 2K12, etc.

Definitely. You won't be maxing some games anymore with just a single 670 at 60fps, but you'll still be pretty set. Going SLI wouldn't be a bad idea when you aren't happy with the performance. Even without a second 670, that big of a monitor wouldn't be too bad for 1080p windowed mode to be honest with you.

Yeah that's kind of what I was thinking...I mean if I get ~40fps at 2560x1440, I could live with that until I got something that would allow me to push 60.

I can't wait until the 4k monitors come out, but they'll probably be hella expensive.
