Honestly, don't bother with sidequests if your talking about ME1. I didn't like the game much at first. I almost got rid of it and ended up trying again. I didn't bother with achievements or anything and enjoyed the story and did some sidequests also. Ended up doing 3 more runthroughs completing all sidequests with static party members for the achievements on 360.

Says more about ME1 than my really forced playthrough of ME2 and getting bored toward the end of ME3.

This raises another issue. I love not missing anything, and since ME has quests that cannot be completed after a certain time, I feel like I should do all of the side quests in an area before advancing the main plot.

Does it? I can't remember any. I know ME3 has a few, but I can't recall any in ME1.

And the dialogue is insanely quiet. Did anyone ever find a fix for that?

I don't get it. Are you anal or nor? If you care so much about doing everything why are you forgetting everything? Do you black out or something?

I know the feeling as far as NEEDING to do everything. I grew up on JRPGs so it took me a very long time to adapt to the WRPG. Most WRPG games make it next to impossible to do a full run through.

The side quests in ME1 aren't very dynamic or cool so I would just either follow a guide, or just try to ignore missing a bit here and there. Don't make a good game feel tedious.

You need to do all the sidequests on each main story planet before you move on, since you can't revisit them once you complete the main missions there. But the UNC sidequests on random planets all over the galaxy can be done whenever you feel like it, up until the end of the game. There is a point of no return near the end of the game where (minor spoilers, really) the Citadel becomes permanently unaccessible once you leave it, but that only affects a few side quests.
