I have been looking at Mount & Blade and Neverwinter Nights, So what other ones? And can run on my pc at low at least?

Check out Divinity 2. The characters and story are kind of obnoxious, but the majority of the game is spent just kinda exploring around the world. A flawed game, but I had fun with it. You can turn into a dragon.

If you're gonna play Kotor keep in mind there's a massive mod that adds cut content back.
