Which X-COM games are worth it for a new person to the series to get into?

I bought the Amazon X-COM bundle whenever it was on sale for stupid cheap, but haven't actually tried the games until now. I started up UFO: Enemy Unknown since it's the first in the series, but I just don't think I can get past the clunky UI in a 20 year old PC game. Which ones have a better UI and are easier for a first-timer in this day and age to appreciate the series?

You sound like you'd like pretty dumbed down things so obviously the newest one would be the best. It's also a TPS so you don't even have to think.

Or, if you want to pretend you're thinking, EU before it.

Just go to the 2012 Enemy Unknown then.

X-com apocalypse is a bit more modern.
I liked x-com interceptor, but most others didn't.

UFO defense and Terror From the Deep are the best ones, but if you can't get passed the old graphics then I wouldn't bother.

I've recently started playing UFO Defence for the first time. Once you get past the menus and the fairly intimidating amount of buttons, it's a ton of fun. Try to give it one more chance.

Yep, the first one is the best. Terror From The Deep does a few things better but other things worse, has a few broken parts, plus you can throw your grenades underwater which is BS. TFTD was legitimately 'scary' for me though with its dark foreboding atmosphere as you walk the bottom of the ocean trying to track down survivors from downed alien crafts. And those cruise ship terror attacks... dag.

I kinda liked Apocalypse back in the day but can't really get into it now. It was pretty cool that you could raid human organizations and steal equipment and stuff, though. Screw you, MarSec, I take what I want!

Anything after that, blah. I also wasn't impressed with the unofficial UFO Afterlight/Extraterrestrial games or whatever they were called (not even enough to look up their names again).

The remake of Enemy Unknown / UFO Defense seemed pretty interesting at first but there are a lot of design choices that I really didn't like and I ended up burning out on it before I even beat it.

So... yeah. If you can't get into the originals, sucks for you.
