Video is the same but HDMI carries audio too

DVI has no audio output.

HDMI carries audio so if you monitor has speakers it would be one fewer cable. Don't think there's any difference in quality at 1080p, but that is the max resolution for HDMI.

HDMI can do ultra it just requires that all inputs match. If you're monitor does not have the high speed hdmi input you'll only get enough bandwidth for that type of input.

If I recall high speed hdmi can put out up to 340hz single abs 680Hz dual link.

The issue is knowing if your display supports the higher bandwidth through hdmi. Everything must match up or it will choose the lowest common denominator.
