Pretty much I want a game that has an overworld where I can walk away from my computer for a couple minutes without any worry of dying and the game will continue to progress.
I already have the Sims, and am aware of and waiting for Stardew Valley.
Any suggestions?

Well, there's always Harvest Moon, and Animal Crossing.
Maybe Farmville? Or any turn-based strategy title.

I sometimes enjoy playing games while I do other things. Pausing constantly is often a pain in this case and makes it so I can't concentrate on anything. I love more hardcore games too of course, just not all the time.

MMOs are good for this. You can grind/craft/farm for a bit and then afk.

The Virtual Villagers series is one. You manage a village, but it all transpires in real time - Whether the game is on or not.

I use turn-based gameboy games for that, especially FFTA.

I wouldn't leave this unattended and unpaused for very long. You might miss something Fun. That said, frequent pausing is already part of typical gameplay, not some extra hassle on top of it.
