And I have a laptop (screen size and available processing power are leaving me with a bitter taste), but I prefer my desktop back home. Problem is its a full atx tower, so its not what I would call portable. Now, can I build a beefy desktop on a mini-atx board?

Sure you can, but it's still not going to be very portable. I guess it mostly depends on your method of travel. It's going to suck if it involves planes.
It's Mini-ITX by the way, not Mini-ATX :)

Yeah, wasnt sure. I knew they made mini boards. In any case, a miniboard/case would be more easily transported than the monster tower I have at home, no?

Sure, yeah. The Bitfenix Prodigy is a good example of a Mini-ITX case, and I think Silverstone has a Mini-ITX case in their Fortress lineup that's nice.
