What kind of gains should I expect from this?

I would think much more than that seeing as it's going from a laptop 360m to a desktop 7970 GPU and a 1 GHz speed upgrade on a CPU that can then be overclocked.

I should hope its quite a bit more than 25%, but I guess I don't really know what 125% of my current laptop could do.

You can play most games on max settings at 60 fps on that machine, barring Crysis 3 and Metro Last Light and the like.

And Tomb Raider with TressFX enabled. Though, I never dip below 50 with my OC'd 7970 with TressFX enabled.

It's ridiculous how taxing it is.

Yeah without V-sync I get 100+ without it but with TressFX I drop into the 40s on my 7970,

TressFX is dumb. I tried it on my GTX660 SLI and it not only drops the FPS in half, but with Nvidia, it makes her hair start flopping around. When I started the game, I couldn't stop laughing when she was hanging upside down and her hair was flying like it was possessed.

Don't worry about enabling weird features or crazy amounts of AA. 2-4x is usually good enough, and won't compromise your FPS. You will be good.
