Unreal Tournament ftw!!
UT2004 is pretty good too.

For more single player stuff, check out Unreal, Quake II and the Serious Sam series.

Odd... does Quake Live have no blood at all or something? Cuz I remember Quake being fairly gory. Heck - the term "gib" originated with Quake as I recall.

Now actually thinking about it, I don't actually remember seeing any gibs or gore in Quake Live.

Quake 3 certainly had it, as did the previous games.

If I remember correctly; Jedi Knight was rated T or 14+
