Oddly, I tried connecting an Xbox 360 to a Samnsung Monitor with HDMI cable thats 1980x1200 and it looked all blurry for some reason. :/
That sentence is horribly constructed. I'll assume you mean the native res of the monitor is 1980x1200, because that's the only way it makes sense.
And of course it looks blurry. You're upscaling the 360's already upscaled 540p/600p/720p/maybe sometimes 1080p output to 1200p. If the monitor has a "1:1" option for image size that might improve things, but then it won't take up the full screen.

A VGA cable will be at best the same. More likely it will introduce some additional blurring. "Fine" is also relative. It is physically impossible for most 360 games to give a completely clear 1:1 pixel image on a 1080p display. 1. Go to system settings and set the display to extended color or whatever. This is what is making it look blurry not any upscaling to fit display or anything. The normal color that xbox reverts to when it detects new monitors looks like butt.
2. Set your xbox to 1080p.
3. Set your monitor to 1:1 aspect ratio.
There will be black bars on the 1920x1200 monitor b/c its aspect ratio is 16:10 while 1080p is 16x9 but it will look good and actually feel more responsive then your hdtv. It will however not look as good as a hdtv because hdtv will have lot of post processing improvements. Thats the same stuff that causes input lag though.
