8GB for windows and other processes
the rest for ram disk

If you're using a dedicated gpu and an intel processor you'll likely never notice the difference unless you specifically benchmark your ram (that goes for dual channel or even just anything above 1600). AMD gets more out of it, but if you're using a dedicated gpu it's going to be a 1-3fps gain at best, enough that it's worth using but not enough that it's worth spending extra money on.

i'll most likely be using an intel processor and as such won't benefit from it and might as well go with a single 8GB stick since they're cheaper.
