You mean something like this?

It's overkill but it should work.

I'm looking for HDMI input and Audio / DVI output (Audio is preferably 3.5mm. It would be used to hook up a console to a monitor that doesn't support HDMI without losing audio (audio would probably go to external headphones)

The link I gave doesn't have a DVI output, but that's easily remedied with an HDMI to DVI cable.

Why not just run a separate audio cable?

You can use the included R/W/Y cable that comes with the PS3, and use a 3.5mm to R/W splitter.

Just set the appropriate settings in the PS3 audio menu.

I hook headphones up to my TV, which my PS3 runs through. Works like a charm.

EDIT: And yeah, you can also split audio output, which I've done before. Back when I used my PS3 with my monitor via HDMI, I wasn't gonna use the monitor speakers, so I set the PS3 to output to component, and ran that through a Y adapter to my speakers. You could easily use headphones instead of speakers in that case, but why bother? If your screen produces sound, you should be able to just plug your headphones in there.
