Anyone else struggle to be impressed by realism graphics anymore?

No, I don't play games for photorealistic graphics in my games, which is one of the major reasons I never got into FPS games.

I prefer graphics that age well, and gameplay mechanics that don't blow.

Well, it depends on what aspect of graphics we're talking about. I'm rarely impressed by things like texture resolutions or realistic shadows, but good physics are still very rare and look impressive. Things like destructible environments, particle physics, physics-based body animations, etc.
