A con or a pro of using steam?

Seems like jus about every game on steam is encrypted to where you can't look at text files to see what makes the game tick or modify.

If they are encrypted then you obviously can't modify them without cracking the encryption. But most games aren't encrypted despite what you are saying. Even if they are, it's not steam's fault, but the developer's.

I've had a few games on both steam and stand alone and the stand alones were not encrypted but the steam ones were.

There are no cons for Steam. All hail the Steam master race! No such thing as encryption on steam games. You find the game folder and can edit anything to your hearts desire.

Developer's fault if that is true. Steam doesn't enforce encryption.
