Yes you would want to go sli/cf if gaming in 2560x1600 with cards with atleast 3gb VRAM.

700$ sounds like the correct medium price for 1600p monitor, but honestly I prefer 1440p gaming.

780s would provide really good performance at that resolution. You might not need that much power but if you're willing to pay for it, then it will be good for quite some time

770 4gb/7970ghz/280x-290x cards in sli/cf would be great alternative choice an save some cash for ya.
