Any brands I should avoid for sure? Any to prioritize?

SSD? (I know samsung 840 evo)
Mechanical Keyboard?
Ram?

I also want a headset $70-$100, any recommendations?

Ram you can pretty much get from anyone. Corsair, G skill, Crucial, Kingston.
Mechanical keyboards, it's really up to you. Watch some reviews online to see which you will fit you best.
SSD's, you can pretty much get from anyone as well. Samsung, Intel, Kingston, Crucial, Corsair.

SSD - Intel, Adata, Crucial, Samsung
Mechanical Keyboard - Ducky, Filco
RAM - G. Skill, Corsair, Samsung (any brand is fine really)

Keyboard - Ducky, Corsair, Razer, Roccat. Fairly easy to make a good keyboard, so get what you like
RAM - G Skill, Corsair, Kingston, Avexir, Adata

As for a headset, it's better to get headphones and a separate microphone.
