Is Euro Truck Simulator genuinley a good game?

I see its name get dropped in multiple places but I'm not sure if it is sarcasm or if it is actually a good game. Is it?

It probably gets a bit of over-praise, but yes, it is a genuinely good game. It paces the rewards well (money, driver upgrades/experience, etc.), and adds a lot more than just driving from point A to point B.

I was actually interested in this too. Are the maps actually accurate? And are there weather effects? Is there some sort of objective as well?

No, yes(at least rain, some mods for snow), and not really.

It's lack of objective is really just an expression of the essence of life. Like life, you need to make choices on what you want to do, and the things you find important. Will you become a corporate giant, only off the job when you need to rest, having a whole fleet of other drivers in your company?

Or will you be an aimless drifter, only picking up jobs when you need to pay your bills? And all you have is your own truck. That's all you need.
