Silly question about video cards regarding brands.

I've noticed with certain models of video cards that they are made by a number of different companies; Gigabtye, ASUS, EVGA etc.

Is there a definitive difference between the brands when it comes to the same model of video card? Perhaps, maybe there are certain ones to avoid?

Fans, clock speed, overclockability, warranty, build quality, etc.

nVidia: Evga is hands down the best
AMD: Sapphire is generally the go to brand.
Let us assume that for the sake of assumption that I am always right.

Depends on the card in question.

They generally have both reference models and non reference models

reference models are pretty much all the same but the non reference models there will always be differences.

ASUS imo is hands down the best when it comes to everything but they tend to also be priced higher.
