Mark of the Ninja does side scrolling stealth wonderfully.
Dishonored is also good since it's mix of steam punk like technology and magic give you options you'd not normally find in more mundane settings. The last three points are all great.

grab the thief games and play from the first one. YEs the graphics will be horrible but it has great mechanics ie both sound and light can be detected ie stay in the shadows and watch what material your standing on. A must play for everybody who likes stealth games.
I second dishonored some of the powers put a nice spin on the stealth formula ie you can blink from rooftop to rooftop; use possession to take control of a guard and use him to get through the security gates etc. The only problem is once you have full time stop ability unlocked the game becomes trivial as you can stop time and pretty much run past everybody. --- Xbox GT: Zarosian 3DS ID: 1848-2118-1570 Origin and SteamID: Zarosio

Splinter Cell: Chaos Theory is the best stealth game I've played, so that would be my advice.

I can't believe nobody's mentioned Splinter Cell: Blacklist. The cover-based stealth works REALLY WELL and makes it the best stealth game I've ever played. The only aggravating parts are some of the 4E missions. (Curse you Kobin and F*** you Charlie and your Russian embassy wave 18-20) --- "I'm amazed TC is still posting.
