best things to do once new computer is built

ive already installed the new 8.1 operating system and anti-virus first. what else should i do other than obviously installing games? i have a gtx780 and i7-4770k, should i run some benchmarks to make sure everything is working right? or should i just check temps while i play some other demanding game? im new to the desktop thing, let me know!

OC the CPU since it's a K series. Check temperatures and make sure it's stable.

Just play I guess, unless you are a benchmarker. Set everything to ultra, enable all those TXAA, and other whatever stuff, and enjoy the lightshow. GTX 780 immediately gave me a motion sickness in Skyrim and BF3 really.

You could stress test your system to make sure everything's working as planned.

Other than that, my biggest suggestion would be to get rid of Windows 8.1 and get Windows 7.

Uhh, the point of getting a K series Intel CPU is to OC it. If you don't plan to OC, then the non-K version of the CPU will do just fine.
