I'll also throw in MindRover. Even now, any time I mention it, this game is HUGELY ignored, and it was an incredible game. More than a dozen different events to build and program (via a really intuitive, easy to learn "wiring" system) your own robots to autonomously compete in a variety of challenges/competitions.
Sumo (hover bots only, meaning inertia is huge; be the first to push the other bot out of the ring) Drag Race (again, hover bots only - cross the finish line first AND stop before your inertia takes you into an electrified fence) Deathmatch (use lasers, guns, or rockets to destroy your enemy before he destroys you) Hot Potato (tag where one bot starts as "it" and must tag the other, then avoid being tagged back) Maze (navigate through a maze - remember, autonomously) Capture the Flag (2 vs. 2, any bot type, any loadout, you program strategy) ... and several more.

To this date, I've not been able to create bread. Beating this game felt like such a feat, if you do play this, make sure to not spoil yourself and just play it through without any prior knowledge.

Can't say just one so i'll say some:
Antichamber (dem puzzles... They made me doubt everything. Floors dissapering, thin air being bridges, and that dark tunnel with weird naturey noises)
The World Ends With You (The battle system, while not too complicated, was unique because you fought enemies on the touch screen AND top screen. Amazing game)
Katamari Damacy (Just rolling everything up, with some crazy random story... My Katamari is bigger then yours ;P)
Metroid Prime (First time i played a shooter that WASN'T just about killing everything... IT HAD PUZZLES.)
Thats it for now. Iv'e never heard of alot of you guys's games. Intresting.
