I ordered a 3TB HDD. Just wondering how I should partition it and what I should use it for. I was thinking either 500gb or 1tb for Steam only.

I don't. I have an 480GB SSD for Windows and programs, and a 4TB HDD for file storage.

Without getting into the complexities of the *nix side of my setup, basically I give 250-300GB of its own for Windows and programs that for whatever braindead reason insist on being on C:\ and give the rest over to programs and user data. Other than that the only partitions are the efi and windows system reserved ones at the front of the disk

512M boot partition, 15GB ext4, and the rest is LVM partioned

Crucial 480gb drives were like $230 a few weeks ago. That's not much more than I paid for my 256gb drive.

Yeah I got the Corsair Force 480GB last summer. Such a nice change from the HDD.

120GB SSD for Windows and Software
1TB HDD for data
250 GB HDD for Ubuntu
1TB external HDD for backups...

You should do something like 100GB for WIn7 and the rest leave it for games.

Personally, I'd have 160GB for the windows system partition and the rest for whatever. Depends on your usage.

Bear in mind that you will need to use UEFI to install Windows on >3TB HDDs (unless you use kludge it as I had to) and this also requires GPT.
