Plug and play support for the 360 pad, can you change play with the DS3?

Like if I plug it into my PC will games recognize it as a 360 controller, or is there a program I can use to make it work?

The plug and play kit wont make your PC detect a wireless controller. A wired controller can simply be plugged in and detected then good to go. I think the wireless controller has a dongle that you can buy.

The most common way to play with the DS3 nowadays is to use the Scarlet.Crush drivers: http://forums.pcsx2.net/Thread-XInput-Wrapper-for-DS3-and-Play-com-USB-Dual-DS2-Controller

It automatically interprets the commands as XInput, so the controller will be recognized as an Xbox 360 controller. It works with bluetooth with a good number of bluetooth dongles, but doing so will make it so that bluetooth dongle ONLY works for your DS3 unless you uninstall the drivers. You can play with the controller plugged in if you don't have a bluetooth dongle or don't want to worry about losing functionality on one you have.
