While no singular game is the be all end all... some correct answers are

SC Broodwar
(Starcraft on its own wasn't great, broodwar helped a lot, but mostly the modding community that sprung up around it...
starcraft 2 is a terrible game that is further from balance now than when zerg roaches cost 75 minerals 0 gas had 1 supply cost and hit air with twice the health and damage of modern ones... To hit balance that game needs a LOT of changes, and its quite obvious that it won't ever get there)

Doom - Wolf - Quake (for introducing what they did)

Halflife - CS mod (because it was amazing... just amazing)

Fallout Series (all good)

TES Series (but not the new MMORPG which is pure fail)

Diablo 1 and 2 (but not 3, 3 is a terrible travesty that requires gallons of eye bleach to correct)... 2 was just a masterpiece of a game...

Balders gate (while not as strong as other mentions, it did some good things)

Guild Wars 1&2 (a mmorpg model that should be more widely embraced, rather than the pure greed of p2p or
p2w models)

Freespace - Descent 1-2 - Tie fighter (and the others of its time)... and the one I am forgetting with the cat race that fought humanity...

Doom, in my opinion. I'm also old.

I cannot stress enough how big of a deal Doom was, across culture, in 1993. It was as big of a deal as some of the Mario games and those releases in the early 90's, and that was when gaming was revived. id also launched the first person genre complete dominance on the PC, and that still lingers today... not to mention shareware and some of the first great LAN and internet gaming (major universities had to ban the game for Christ's sake). Myst also moved a ton of PC's in the 90's, and helped bring the whole market to the forefront.

If not Doom, than it has to be Half Life as it helped launch Valve to prominence, and as some one that remembers life before Steam... this is a big deal.

Wolf is still the best though.

Yeah, it's not a game, but it saved the PC gaming market just as surely as SMB saved consoles.
