It might be a bit older then what you're looking for, and I honestly dunno how well it holds up, but Alone in the Dark 2 takes place in a New Orleans mansion and involves dealing with Haitian voodoo and gangsters. (The first game also takes place in the area, but it's focused on Lovecraftian subject matters and doesn't get into any other parts of the setting too much.)

Alone in the Dark 2 is set in California, not New Orleans. The first three minutes of AITD1 had a nice moody Louisiana bayou feel to it, though.

I will third Gabriel Knight. It is one of the best researched games I have ever played. A lot of the parts of the game are based on real locations - real locations that don't exist any more.

Infamous 2 took place in what was a city designed inside and out to mimick New Orleans.

Also, Red Dead Redemption had an outpost region called Thieve's Landing which is very Louisiana swampland.
