Persona games have very, very loose story connections between each other. They're all fairly self-contained, with the notable exception of P2, which was released in two "flavors" -- Persona 2: Innocent Sin and Persona 2: Eternal Punishment -- but that one works more like, say, Lord of the Rings in that it's one large story told across multiple books/movies.
You would miss more starting Persona 2: Eternal Punishment without having played Persona 2: Innocent Sin than if you were to play P3P without playing either P2 "episode". In fact, you'd miss hardly anything from playing P3P without playing either P2.
My first Persona game was Persona 2: Eternal Punishment on PS1. Much as I have tons of nostalgic affection for that style of game/story, I much prefer what the series became with Persona 3, which is why I keep stressing that title in particular. It was a breath of fresh air when it came out, marrying seemingly disparate gameplay systems (monster-fusion, dungeon-crawling, turn-based combat, and WTF dating sim) seamlessly while still maintaining its dark, aesthetic charm and offering up as much pick-up-and-play accessibility as the series could muster.
PERSONA 3 IS MUST-PLAY MATERIAL.
