(Advance/Jump/Retaliate/Barrage)

And do both arms build when attacking with a bow and arrows or just one?

Omit the second question, I found the answer on Seferaga's Walkthrough.

I still need to know about Advance/Jump/etc.

Anyways, I can't tell if my hit total is increasing because of Melee Proficiency or the fact that I've just gained Job Levels in the process of spamming Advance.

You only get one extra hit per arm for every 14 job levels. In addition, you could use a job for which you already have 99 job levels.

I'd like to know about melee proficiency building with Retaliate as well...

Pardon the double post, but another question: if you attack the enemy(or yourself) a few times for melee points and then run instead of finishing the fight, do you keep or lose the points?

I'm not sure about this, but my guess would be that it works just like job levels; you keep the points, but you'll never go up a level until you actually win a fight, and you can only keep twice the amount of points needed for a levelup without actually leveling up.
Because obviously we're talking about single melee proficiency levels here, this would be incredibly hard to verify though.
