The only true solo job challenge is Freelancer as it is technically a job and switching off of it means you have used multiple jobs and I am pretty sure it has been done.

A 100% True Solo run is technically impossible in nearly every game designed around teams. There's virtually always some point at which you are forced to include or outright use at least one other character. As a result, gamers allow for such situations when they talk about solo runs, with the caveat that the player must attempt to minimize the presence of the extra character(s) as much as possible (such as killing them off before attacking any enemies).

Likewise, it's reasonable to assume that gamers would overlook the mandatory starting class in a solo job challenge, provided you unlock and switch to your intended job as quickly as possible (aka at the lowest possible level).

As for the original post, I'm surprised no one has posted:

It really won't be that hard I think. The biggest issue is going to be the lowish end-game HP. Vikings for example can expect to have more than 4100 HP at level 65, freelancers about 3750 and onion knights less than 2800. Still, you get to equip and use literally every single non-Wifi only piece of equipment and all magic at all times. I'd be a little more worried about beating that rat with classes that can't use magic in all honesty.
