I installed it but when I tried to launch Spore it says I need a connection to prove I own the game?
Surely this can't be right, isn't having the game and entering the serial # enough proof?

I had the same problem at first, wasn't sure if the servers were just overloaded or what, but I think if you try to register in the sproepidia tab you can do it there.
If it doesn't work right away, try again in a few minutes.

This is the main reason that A LOT of people are upset with this game at the moment. Because of the extreme anti-piracy measures they're taking. With your serial number, you can't install it more than 3 times. If you try to, you'll have to contact EA to get them to increase the number of game activations you can perform. But they don't HAVE to.
This is what DRM is about. You pay for the game, but instead get a mere license to play it. If their validation servers go down, you won't be able to install it at all, unless you crack it.

There is no two ways around it, you need internet for activation.
Once you activate the game you don't need the internet to play (unless you want to share content). --- Oh so they have the internet on computer now.
