Godfather was great for the time it was released. Some repetition but it's an open-world game with lots of content and some interesting gameplay elements. I never played the 2nd.
Mafia 2 didn't have much going on outside of story missions, but nailed the 40's and 50's atmosphere.
GTAIV dealt with the Liberty City mafia, but didn't really nail it that well.

Best overall in my opinion, The Godfather followed by Mafia II. Also the original Mafia is pretty damn good.

I tried playing the original Mafia for the first time on my PS2 last year. Looks like there is a great game in there, but I couldn't get past the old school shooting mechanics. I wish I would have played it years ago on the PC.
