Fighting game: Arcana Heart 3. It just has the mobility and mechanics that I love all combined so well. HD sprites and 2 player training mode were the only things missing.
RPGs: Xenoblade Chronicles and Resonance of Fate. Both of them for their battle systems, customisation, exploration and story telling, but all for different reasons. Both games gave me that "SNES RPG" vibe that most RPGs don't and I seem to like.
Stylish Action 'Em Up: Bayonetta. Get rid of the awful non-fighting bits and try to not have 'Fly Me to the Moon' as a main character in the game and it'd be pretty close to perfect.
Deathmatch: Unreal Championship 2. That game IS perfect... aside from only having 4 preset controller configurations, none of which do I like. However you can change it in an .INI file :D
Tales of Symphonia. I loved that game. So close to perfection. My only problems with the game. It needed more Cgi cutscenes. The skits should've been voiced. And the PS2 version never got released in the US (it had added content) . For gameplay My only gripe (now that I've played more of the Tales of.... Games) Is that you can't move you character around.
Still a 10/10 in my opinion. Best RPG Ive ever played.
